Nice, I made some birria tacos recently with chuck. Turned out really good, but cheek meat is my favorite.
Have you had birria made with proper goat meat? It’s heavenly.
I haven’t and I’m not sure where I would get it. Probably a specialty butcher or maybe Fiesta.

I’ve never made it myself, unfortunately couldn’t tell you.
For birria, I do bone in Chuck and short ribs for that delicious boney fatty goodness. Makes for great consomme.
