When I create a post in Vlemmy the drop down to select language only has Undetermined and some symbols which likely describe some other language, but I can’ tell which.

go to settings and check the languages box, the languages you select here will be shown as options on the dropdown, you can also click the ‘x’ to unselect everything, then all languages will be shown. don’t forget to click save.
That did it. I must have gone there at some point and select the wrong language.
