You could do the same thing with a pair of switches (light switches or whatever kind) using a single breaker. A DP/DT, NO/NC switch would make sure power only comes from one source at a time.
I’d put a lighted switch in a box next to the panel with bypass clearly labeled and lit up when in bypass.
