What’s everyone using for sandwiches? I’m using the Schar “Artisan Baker” but it’s $8-9 per loaf, and I’m wondering what other options people like for making a plain old sandwich?
Mix 2-3 tbsp of whatever flour sub you like (I’ve done this with a mix of flax and almond flour IIRC), an egg, salt to taste, and 1tbsp of olive oil. Pour it into a shallow container approximately the shape of a slice of bread, and microwave it for one minute.
This looks hokey as shit, but it turns out pretty okay. Yield is about 1 slice of normal bread.
