As someone who collects antique cookbooks/household management books, and often has to transcribe (sometimes even translate) all sorts of annotations, this is super interesting to hear about.
Totally signing up and having a bash when I have some free time.
I would say I’m definitely on the amateurish side of things, I mean I could definitely do some letters (like the above), but with annotations the hardest part (at least for me) is often the lack of punctuation, spelling, and even grammar, so unless you know the subject it gets a bit hard. My translating (French) is definitely not up to snuff for anyone but me, I would absolutely need extra consultation for it to go anywhere.

If your paeleography is that good (and you have the language skills) try Annotated Books Online.
