To be 100% fair, Lemmy does not have the best most intuitive federation in the world, it’s definitely something you have to get used to. A lot of other federated projects make federation way easier to stumble into others and vice versa, where you’d really have to try super hard not to stumble across other people, and even then, you’d probably fail. Though, I don’t exactly know how Lemmy would implement that sort of federation, while keeping the reddit-esc layout.
Yeah I get that, just wish it was easier to sink hooks into other instance communities (the weak documentation doesn’t help of course). Mostly been opening up other instances, copying communities I like, then pasting them into the burggit search like was recommended and it’s a 50/50 it plays ball, and then subscribing to it so it reaches my feed even semi-constistently. That Jerboa app is absolutely abysmal for discovery too, completely relegated to the local instance, so all you can reach is what floats up on the all page.

I too have noticed the adding instances via the search button doesn’t always play ball, sometimes I have to wait awhile and other times I straight up have to try a few times. Though to be fair, Lemmy had very minimal usage until just recently. The devs are no doubt kicking it into high gear to try and meet the new demand.

Quick refresh seems to help it find the instance you’re searching for in my experience.
