I just use my Macbook for photos, Excel, Word and internet, so bot a full on power userz. Debating between an M1 and M2. If one gets an M1, does that mean one will be unable to update the OS sooner than with an M2 model (by like one or two years)?

Probably not. Apple is usually pretty good about not sunsetting computers until they have to.
