I’d like to have a few totally separate Notebooks, currently i have my Finance stuff mixed in with my Tech notes, with my writing prompts etc and i’d also like a completely separate one to share with my partner on travel notes
Am i missing something or is this not possible?

Easily possibile with profiles, each profile can have its own synchronization method. Creating notebooks to group notes is also possible, both on mobile and desktop.
Just a tip that you in fact can create new notebooks or even trees of notebooks.
But if you want a completely separate collection of notebook, you can create a new profile (file - profile -new profile).
