    Chocolate bars and cocoa powder are basically the same

    Not quite, chocolate bars contain cocoa butter or milk fat (to make the bars). Also may contain sugar, so a chocolate bar has more ingredients than pure cocoa powder, which can definitely alter the result in a recipe.
