You can make falafel with lentils and they turn out real well in my experience
A packet of dried French onion soup mix with lightly mashed lentils and shredded carrots makes a really nice veggie patty for sandwiches
I’m a big fan of using lentils and cumin or other curry spices in risotto. This also makes for the best arancini I’ve ever made
They work really well in pasta sauce. Adds some extra texture and protein.
