They don’t have to be standing next to the box. They can be nearby in a car or in a building with camera feed. As long as they are able to pursue someone that tampers with the box.
So, my wife is an elected precinct committee person and last election we were tasked with watching a ballot box to make sure nothing went wrong and nobody was intimidated.
We parked on the other side of the street about a block down and just… watched.
Guards are a terrible idea. Voter intimidation anyone?

Definitely, I wasn’t going to let her do it by herself and I have a concealed carry permit. ;)
