Looks crazy delicious, but what’s with the chile peppers, I’ve never seen such a green pepper.
I think it’s a shishito pepper, they’re usually served roasted. They can be hot but most are mild.

I’ve seen this recipe with 100% potato starch and 50/50% corn starch/ flour. What do you guys think?
It’s actually triple fried and 50/50 corn starch/flour. Here’s the recipe if anyone’s curious.
